Strawberry Icecream Mochi Recipe
Ingredients
Strawberry and Cream ice cream
Cupcake tray
Four cupcake liners
A cup and a half of glutinous rice flour
Bowl
Plastic wrap
Whisk
Any kind of Oil
A cup of cornflour
Rolling pin
Steps
1. Mochi Filling
Take four of your cupcake liners and fill up four sections in your cupcake tray.
Scoop 4 scoops of the strawberry and cream ice cream and put them in the liners.
Leave it in the fridge while you work on the mochi skin.
2. Mochi skin
Scoop three scoops of strawberry and cream icecream into a microwavable bowl and microwave until the icecream melts.
Once melted, add a cup and a half of glutinous rice flour into the bowl and mix.
Once well mixed, cover the bowl with plastic wrap and microwave for 30-40 seocnds.
Oil your hands, so that the mochi skin doesn't stick, and knead the dough until it is smooth and stretchy.
Divide the dough into fours and sprinkle cornflour on your table.
Roll out each section of the dough, so that they become round and flat.
3. Assemble
Take the ice cream out of the cupcake liner.
Take the mochi skin you rolled out and put a scoop of ice cream in the centre. Wrap the skin all around the ice cream, and you're done!
