NATIONAL GEMSTONE Opal production was worth $71.4 million to Australia in 2003 and supports many communities in New South Wales, South Australia and Queensland. Was adopted as an Australia national gemstone in July 27 1992

The fly contains a representation of the Southern Cross constellation, made up of five white stars – one small five-pointed star and four, larger, seven-pointed stars.

Melba toast is a dry, crisp and thinly sliced toast, often served with soup and salad or topped with either melted cheese or pâté. It is named after Dame Nellie Melba. Melba toast is made by lightly toasting slices of bread under a grill, on both sides. The resulting toast is then sliced laterally.
