Auguste Escoffier

Georges-Auguste Escoffier, who is famous for being a french culinary artist. He earned the name “the king of chefs and the chef of kings,” and became know world-wide. He also gained attention and fame being the Chef de cuisine at the Savoy Hotel.

Careme

Marie Antoine Carême was a french chef who is known for serving royalty in Europe. He became even more famous when he started to elaborate style and art into his dishes/work.

Caesar Ritz

Caesar Ritz was a founder of many hotels! His hotel's Chef de Cuisine was Auguste Escoffier. This helped them be know all around Europe and be successful.

Kitchen Positions:

Chef de cuisine(executive chef):
Chef position with the overall responsibility including hiring, firing, cost control, meetings, budgets, new recipes, purchasing and much more.

Sous chef:
Assistant to the Chef de Cuisine and are their substitute if the executive chef is absent. Responsible for the sections. Has different responsibilities.

Saucier/Sauce Chef:
Is responsible for preparing all the dishes that relate to sauces.

Rotisseurs/ Roast Chef:
Responsible for roasting, deep frying, braising meat dishes.

Entremetier/ Vegetable Chef:
A chef who is responsible for vegetable preparations including potato and egg preparations.

Chefs responsible for all hot and cold desserts for.

These chefs are responsible for all cold preparations like salad, sandwiches, cold sauces and cold cuts.

They are responsible for all the dishes containing fish and how it should be prepared.

The chef that specializes and is responsible for preparing all types of grilled foods.

Famous Canadian Chefs:

Lynn Crawford

Lynn Crawford is a Canadian Chef. She is known for her appearances on the Food Network show Restaurant Makeover, which is seen in over 16 countries worldwide. She attended George Brown College in Toronto, Ontario.

David Adjey

David Adjey is another Canadian Chef who is best known for another food network show called Restaurant Makeover. He also starred in iron chef for a little while and attended The Culinary Institute of America.

Chuck Hughes

Chuck Hughes is a French-Canadian chef born in Montreal. He is best known for being a television personality and is a co-owner of Garde Manger and Le Bremner, located in Old Montréal.
