This process is due to some people being naturally lactose intolerant, their milk can get changed for their tolerance using a Enzyme. When lactase is added to milk, it breaks down into monossacharides and it will now be able to be consumed by lactose intolerant people. This is a clear example of Enzymes in the industry.
