EN LIOFILIZACION: Para liofilizar un alimento primero hay que congelarlo y después desecarlo al vacio.

EN AHUMADO: El humo incide sobre los alimentos para eliminar los microbios, se conserva estupendamente cares, pescados, embutidos y quesos.

EN SAL: La sal elimina la humedad de los alimentos impidiendo el crecimiento de microorganismo.
